12 x Coonawarra Premium Vineyards 2010 Sauvignon Blanc Coonawarra Premium Vineyards has been growing grapes in the Coonawarra region for a number of years and a certain block of the vineyard, Bin 18, has consistently produced grapes of a particularly unique character each vintage. CELLARING: An outstanding wine made to drink young and fresh and will reward with careful cellaring in the medium term. SUGGESTED FOOD: Enjoy with salt and pepper squid or a chicken Caesar salad. PALATE: The front palate opens with ripe kiwi fruit followed by intense lemon characters and a hint of sweet herbs. The light creamy texture is balanced by a zesty finish. BOUQUET: Lifted tropical fruit and ripe lemon aromas with a touch of sweet spice in the background. COLOUR: Pale straw in colour with a touch of green tinge hues. VINTAGE: Due to above average soil moisture levels, ideal growing conditions, minimal disease and above average summer temperatures 2010 vintage began earlier than usual. Favourable conditions during spring with minimal frosts and settled flowering conditions allowed for excellent vine canopy development and fruit set. WINEMAKING: The best small batch of our Coonawarra Sauvignon Blanc was selected by the winemaker and was picked in late February during the coolness of night to retain maximum fruit character. Cold pressed and separated into 2 fractions, the juice was cold settled, coarsely racked and fermented separately. A small portion of the juice was fermented with new French oak and left on lees to mature for 6 months after fermentation to add some creamy complexity. The main portion of the juice was fermented in tank and clarified and stabilised straight after fermentation. The resultant blend retains the fresh, tropical aspects of the tank fermented wine, along with the added nutty complexity of a small portion of oak fermented wine.
